Potato chicche on a tomato purée

Ingredients for 4 persons

1 pack of Nonno Nanni Potato Chicche
400g of cherry tomatoes
Basil
Onion
Extra virgin olive oil
Salt

Nonno Nanni Chicche are small mouthfuls of potato ready in 2 minutes.

Method

Prepare the sauce:Sweat the onion in a large frying pan, add the cherry tomatoes, a few basil leaves and a pinch of salt.

Carry on cooking until you have a tomato sauce. Blend it and, if necessary, add more oil. Cook the Potato Chicche in boiling salted water then drain them.

Arrange them on the tomato purée, decorate with a basil leaf and serve immediately.
