Avocado & chicken wrap with Nonno Nanni Squaquerello
250 g Nonno Nanni Squaquerello
150 g chicken breast
2 piadine (traditional Italian flatbread)
juice of ½ lemon
extra virgin olive oil
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Halve the avocado and remove the pit, then peel and dice. Place the diced avocado in a small bowl with the lemon juice, salt, pepper and chopped parsley; mix. Thinly slice the chicken breast, season with salt and pepper and grill. Heat the piadine in a non-stick frying pan for about 2 minutes per side. When they are hot, fill the centers of the piadine with the avocado mixture, sliced chicken and Nonno Nanni Squaquerello. Roll them up and heat for 1 minute on the hot grill. Cut in half and serve.
