Diced vegetables and grilled Nonno Nanni Primosale
Ingredients for 2 persons
4 packs of Nonno Nanni Primosale
200 g cherry tomatoes
1 red onion
6 courgettes or other vegetables as you choose
1 teaspoon toasted pine nuts
2/3 blades of chives
extra virgin olive oil
salt and pepper to taste
Nonno Nanni Primosale is a fresh, delicate, firm cheese.
Method
Wash and dice the tomatoes and courgettes. Slice the onion and sauté gently in a pan with some oil. Add the other vegetables and sauté until golden and crispy. Season with salt and mix. Toast the pine nuts and add to the pan with the vegetables. Season with some extra virgin olive oil, salt and chives to taste. Grill the Nonno Nanni Primosale lightly on both sides. Serve the diced vegetables on a plate with the Primosale cheese topped with a drizzle of oil.
