White Stockfish salad
Ingredients for 4 persons
Softened stockfish – 300 g
Nonno Nanni Stracchino alla Yogurt – 100 g
Red onion – 1
Small white onion – 1
Green Celery – 80 g
Extra virgin olive oil – 40 g
Carrot – 1
Bay – 2 leaves
Slices of homemade bread – 4
Salt, pepper and parsley to taste
A fresh, soft cheese with a unique flavour
Method
Cook cod with carrot, white onion and bay leaves in lightly salted boiling water until completely cooked. Drain liquid from stockfish and let it cool; in the meantime clean and cut celery and red onion as matches. Season stockfish with salt and pepper to taste, add a little oil, vegetables and Nonno Nanni Stracchino allo yogurt; mix it all up and serve with toasted homemade bread and chopped parsley.
