Bagel with marinated salmon, rocket and Nonno Nanni Fresco Spalmabile

• 150 g di Fresco Spalmabile Nonno Nanni Leggero
• 2 cetrioli
• Noci tritate
• Germogli di borragine
• Olio evo e sale
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Put the salmon carpaccio in the freezer for 96 hours. Defrost in the fridge and marinate for 30 minutes with the grated peel and juice of the lime, dry Vermouth, sliced shallot and a generous pinch of salt. Cut the bagels in half and warm gently on a griddle. Spread the bottom half with Nonno Nanni Fresco Spalmabile and lay a salmon slice on top (remove the shallot) and garnish with rocket leaves. Put the top half of the bagel back on and serve.
