Tomato and chilli pepper risotto and quenelle of Nonno Nanni Fresco Spalmabile
250g of wholemeal rice
1/2 bottle of tomato sauce
One fresh chilli pepper
Olive oil as needed
Salt and pepper
1 Fresco Spalmabile package
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Wash the rice under running water. Cook the rice in a pressure cooker with just enough water to cover the rice and a little more. Enough salt without overdoing it. When the pan starts to whistle, allow the rice to cook for another 25 minutes.
Prepare the spicy sauce: fry the chopped onion in a pan together with the chilli pepper without seeds in a drizzle of extra virgin olive oil. Add the tomato sauce.
Season with salt and allow the sauce to reduce.
As soon as the rice is ready, add to the spicy sauce and mix well for a few seconds. Take the heart-shaped moulds and spoon the rice into them. Brush the rice with a little oil. After a few minutes, turn them out onto a plate. Decorate with some quenelle of Fresco Spalmabile and serve immediately.
