Strawberry Tartlets with Basil and Lemon-Flavoured Fresco Spalmabile Cream
1 package ready-made shortcrust pastry for fruit pies
2 packages Nonno Nanni Fresco Spalmabile
a handful of fresh basil
2 tablespoons granulated sugar
grated lemon zest
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Method
Preheat the oven to 180°C
Butter the tartlet moulds, line with parchment paper.
Roll out the shortcrust pastry and cut out 6 circles large enough to line the moulds with the dough. Make sure the dough is attached well to the bottom and the sides.
Cover the surface of the dough with circles of parchment paper, fill the tartlets with dried beans or chick peas and bake for 10 minutes. Take the tartlets out of the oven and let cool.
In the meantime, finely chop the basil, whip the Fresco Spalmabile with the sugar and grated zest of half a lemon until the cream is soft and foamy.
Wash the strawberries and cut them in half. Fill the tartlets with the basil and lemon-flavoured cream, the strawberries, garnish with a cheese quenelle (like a dumpling) and serve immediately.
