Courgette Flowers Filled with Nonno Nanni Lactose Free Robiola with Mint Sauce
12 courgette flowers
500 g Nonno Nanni Lactose Free Robiola
plenty of grated nutmeg
a pinch of salt
For the sauce
one bunch mint
one handful blanched almonds
olive oil, as needed to make the pesto
Nonno Nanni Lactose Free Robiola is a fresh, tasty cheese designed to meet the needs of those who are lactose intolerant.
Preheat the oven to 180°C. Gently wash and dry the courgette flowers, remove the pistils. Mix the robiola with the nutmeg and a pinch of salt. Fill a piping bag with the mixture and fill the courgette flowers. Arrange them in a baking pan, drizzle with a little oil and bake for 10 minutes. In the meantime, make the sauce: purée all the ingredients into a pesto-like sauce. Serve the stuffed courgette flowers with the mint sauce.
