Dessert with soft fruit

Ingredients for 4 persons

Nonno Nanni Mascarpone -100 g
Soft fruit – 150 g
Fresh cream – 125 g + 45 g
Sugar – 15 g
Yolk – 1
Isinglass – 1/2 sheet

Nonno Nanni Mascarpone is a cheese with an unmistakeably velvety, creamy consistency.

Method

Put yolks in a bowl the bain-marie way by making sure water does not boil and beat them with sugar, Nonno Nanni Mascarpone and with the 45 g of fresh cream. Add previously soaked in cold water isinglass and let dissolve. Place the bowl in really cold water and continue to whip the mixture until it is completely cooled; add the 125 g of fresh cream. Fill glasses by alternating the layer of mousse with soft fruit; after completing the glasses, put inside a refrigerator for at least 4 hours so it can set.
