Nonno Nanni Mascarpone cake with cookies
500 g of Nonno Nanni Mascarpone
150 g of dry biscuits
2 organic lemons
100 g of sugar
60 g of butter
Nonno Nanni Mascarpone is a cheese with an unmistakeably velvety, creamy consistency.
Grease a cake pan and cover it with a disc of greaseproof paper. Heat oven to 180°.
Melt the remaining butter in a saucepan and add crushed dry biscuits and then mix well. Cover the edges and the bottom of the pan and store inside a fridge.
Beat Nonno Nanni Mascarpone with sugar. Grate lemon girds, squeeze the juice and add them both to the mixture. Separate egg yolks from whites, combine the first to mascarpone cream and the mount egg whites separately which will be added to the rest at the end.
Pour mixture into a cake pan and bake for at least 40 minutes.
Take it out of the oven and let it completely cool down before serving.
