Gorgonzola Cheese Balls and Nonno Nanni Mascarpone
100 g of sweet gorgonzola
100 g of Nonno Nanni Mascarpone
1 small onion
80 g of filleted pelled almonds
100 g of walnut kernels
salt and pepper
Nonno Nanni Mascarpone is a cheese with an unmistakeably velvety, creamy consistency.
Peel and chop onion finely. Mix Gorgonzola with Nonno Nanni Mascarpone well inside a bowl, until getting a cream. Add chopped onion and parsley, season with salt and pepper. Store inside a refrigerator for at least 30 minutes so the cream can thicken.
Make lots of small cheese balls using a teaspoon and then roll them over the almonds so they get covered with grain.
Serve balls together with a small bowl filled with walnut kernels.
