Potatoes baked in foil with Nonno Nanni Mascarpone
4 large hard potatoes
150 g of Nonno Nanni Mascarpone
Some blades of chive
1 bay leaf
Nonno Nanni Mascarpone is a cheese with an unmistakeably velvety, creamy consistency.
Wash potatoes well but do not peel them. Wrap them separately in aluminum paper. Then place them in a preheated oven at 190° for one hour.
Mix Nonno Nanni mascarpone with chopped chives, rosemary and bay, then season with salt and pepper.
After removing them from the foil, potatoes can be served in various ways.
Make the base even in order to place them "upwards" on a platter, then cut them into thick slices, while placing some flavored Nonno Nanni Mascarpone between one slice and the other. Or dig in the tip and fill it with cream, or arrange them horizontally and shape them as boats so they can be stuffed.
