Mediterranean savoury tart with cherry tomatoes, courgettes, pesto and Stracchino
1 roll rectangular puff pastry
½ yellow pepper
100 g Pachino cherry tomatoes
250 g Nonno Nanni Stracchino
extra virgin olive oil
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Lay out the roll of puff pastry on a baking tray lined with greased paper.
Rinse and cut the courgettes into thin discs. Arrange on the puff pastry in three rows, overlapping the discs slightly and keeping about 3 cm away from the edges.
Cut the pepper into slices across the width, remove the seeds and arrange on top of the courgettes.
Cut the cherry tomatoes into halves and arrange on the savoury tart.
Season with salt and extra virgin olive oil. Fold the edges of the puff pastry inwards.
Bake in a preheated oven with static heat at 180°C for 30 minutes.
Remove the tart from the oven and add a few spoons of the Nonno Nanni Stracchino, the pesto and the thyme leaves.
