Bucatini caprino and pepper
Ingredients for 4 persons
Nonno Nanni Caprino – 240 g
Hard wheat flour Bucatini – 320 g
Coarse salt to taste
Black pepper to taste
Extra virgin olive oil to taste

Method
Cook bucatini pasta in plenty of salted water. Meanwhile prepare a cream by mixing Nonno Nanni Caprino with a little cooking water. Strain pasta slightly underdone dente and keep aside some of the cooking water. Heat oil in a saucepan, first add spiced pepper and then pasta and cream cheese. Add cooking water a little at a time and finish cooking the pasta, which should turn out to be very creamy and slightly underdone.
