Vegetarian rolls with Nonno Nanni Stracchino Probiotico
4 long-shaped eggplants
200 g of Nonno Nanni Stracchino Probiotico
8 long skewers
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour.
Wash, peel and dry vegetables.
Cut zucchinis running lengthwise into about half a centimeter slices; try to cut them all the same thickness. Slice eggplant as well, and always running lengthwise. Remove white fillets inside peppers and cut them into strips, just like the zucchinis.
Grill all vegetables on a non-stick plate or on an electric grill until they become soft. Add salt. Work Nonno Nanni Stracchino Probiotico in a bowl with sesame seeds. Arrange a knob of cheese on each grilled vegetable, roll up until getting a roll which you will put on the wooden skewer. Alternate different vegetables on the skewer, place them on a serving dish and drizzle with extra virgin olive oil.
