Pinzimonio (sauce of oil, vinegar, salt and pepper) with Nonno Nanni Fior di Stracchino
2 stalks of celery
1 head of late Treviso radicchio
1 head of Belgian endive
Extra virgin olive oil
juice from 1 lemon
150 g of Nonno Nanni Favola di Latte
100 ml of cream
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour.
Wash and peel all vegetables accurately: take out all woody parts and make sure all vegetables are fresh. Cut them into thin strips and try to make them all the same size.
Use one bowl to prepare classic pinzimonio by using some lemon juice, fine olive oil, salt and pepper and beat them all together with a fork.
In another bowl, first mix cream with half a lemon’s juice, then add Nonno Nanni Favola di Latte, some paprika (dose the amount you wish), add salt and stir until getting a well-blended sauce.
