Tagliatelle with crispy rocket pesto
4 of tagliatelle nests
3 tablespoons of Nonno Nanni Fior di Stracchino
3 teaspoons of Nonno Nanni Robiola
grated Parmigiano cheese to taste
1 bunch rocket
2 tablespoons extra virgin olive oil
1 tablespoon of warm water
salt and pepper to taste
mix of organic pumpkin, flax and sunflower seeds to taste
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour.
First put the Nonno Nanni Fior di Stracchino and Robiola in a tall, narrow container and add the rocket (washed and dried), extra virgin olive oil, warm water, salt and pepper. Blend the ingredients for 2 minutes until you get a well blended mixture; you can add cream to taste. Meanwhile, boil the water for the pasta and cook the tagliatelle, which you will dress with the creamy mixture and season with a final sprinkling of grated Parmigiano and mix of organic pumpkin, flax and sunflower seeds.
