Spinach Ravioli with Fior di Stracchino cheese
320 g of ravioli stuffed with ricotta and spinach
2-3 ripe tomatoes
3 tablespoons of extra virgin olive oil
a clove of garlic
150 g of Fior di Stracchino cheese
some fresh basil leaves to garnish
grated cheese as you wish
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour.
Cook stuffed tortellini in plenty of salted water. Meanwhile, in a non-stick frying pan, gently brown garlic in olive oil; add diced tomatoes and let them cook at a high heat for few minutes. After straining the tortelli mix and flavor them, then finally add fior di stracchino cheese and mix well while removing from the flame. Prepare on a serving dish and garnish with fresh basil leaves. Add the fresh grated cheese you wish.
