Piadina with radicchio and Nonno Nanni Squaquerello
2 heads of late Treviso radicchio
1 small shallot
250 g of Nonno Nanni Squaquerello
80-100 g of sliced bacon
extra virgin olive oil
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Peel radicchio and wash it under running water, then cut it into pieces that are a couple of centimeters and let it flavor in lightly fried olive oil with finely chopped shallots. Season with salt and pepper and let it cook at least 10 minutes, until radicchio is browned but make sure not to burn it. Scent by adding a sprig of rosemary, which you will take out after cooking.
Warm piadinas well on a large pan, or on a plate, by turning them over on both sides.
Fill piadinas with the radicchio, bacon slices and Nonno Nanni Squaquerello, fold them in half and place them quickly in a pan.
