Risotto with radicchio and Nonno Nanni Squaquerello
320 g Carnaroli rice
150 g of Squaquerello Nonno Nanni
2 heads of radicchio
1 clove of garlic
salt and pepper to taste
Grated Parmesan cheese
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Prepare some lightly fried onions together with which you will add a clove of garlic and chopped Italian radicchio and cook for a few minutes; add rice and let it toast, season with salt and pepper. After toasting, steam with red wine and cook while gradually adding the broth. At the end add the Squaquerello and grated Parmesan cheese.
