Twisted Pizza with Nonno Nanni Squaquerello
4 packages rectangular ready-made pizza dough
2 packages Nonno Nanni Squaquerello
500 g cherry tomatoes
olive oil, as needed
fresh rocket, as needed
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Preheat the oven to 220°C. Cut the pizza dough lengthwise into strips at least 4 cm wide. Twist and lengthen the strips to make ribbons. Line a baking sheet with parchment paper and arrange the dough starting from the centre of the pizza to form a kind of pinwheel with the twisted ribbons. Dice the cherry tomatoes, discard the extra juice, dress them with oil, salt and a pinch of chilli pepper. Brush the surface of the dough with olive oil, sprinkle with the tomatoes and bake the twisted pizza for 10 minutes. When it's ready, flavour it with a few tablespoons of Squaquerello and a handful of rocket. Serve immediately.
