Knurled tagliatelle with Squaquerello
180 grams of knurled tagliatelle
1 package of Nonno Nanni Squaquerello
50 grams of cana de lomo
1/2 white onion
a handful of Parmigiano cheese
olive oil
white wine
black pepper
salt
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Method
Fry the finely chopped onion with olive oil: when it is golden, chop the salami and add it to the pan for a few minutes. Then, pour the white wine and season with salt and pepper. Finally add the fried mix with the Squaquerello and cook for another 5 minutes, stirring often.
Bring the water to the boil and cook the pasta; once it's al dente, pour the pasta onto the sauce in the pan and sauté for a few minutes. Serve immediately with a sprinkling of Parmigiano.
