Cream with Squaquerello and Caramelised Cherries and Crumble
4.4 oz of Nonno Nanni Squaquerello
5.3 oz of whipping cream
1 tbsp of icing sugar
1 egg yolk
1.4 oz of granulated sugar
3.5 oz of biscuits
1 oz of butter

Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Method
Clean and wash the cherries and pit them with the special utensil. Put them on the hob covering them with a thin layer of sugar, and let them wither but not come apart. Put a spoonful of the cherries with a little of their juice on the bottom of 4 glasses (ideally whiskey glasses, but you can use any you prefer) and prepare the cream cheese.
Whip the cream and add the icing sugar, slightly soften the Nonno Nanni Squaquerello with a spoon to better incorporate the whipped cream. Stir gently until the mixture is smooth.
Dissolve 1.4 oz of granulated sugar with as much water in a saucepan and bring to the boil. From the moment it boils, stirring constantly, allow 2 minutes then turn off the heat and let it cool. Lightly beat the egg yolk and slowly add the syrup, stirring constantly. Once this is done add it to the mixture of cream and cheese, mix and then dish out the cream into the glasses over the cherries (to avoid getting the rims dirty help yourself with a pastry bag).
Coarsely crush the biscuits, melt the butter in a pan and add the crushed biscuits, stir for a couple of minutes, then once cold, spread the crumble on the cream to top the glasses. Cover with plastic wrap and store in refrigerator until ready to serve.
