Strozzapreti with Radicchio and Nonno Nanni Squaquerello
400 g strozzapreti
50 g radicchio
60 g Nonno Nanni Squaquerello
salt to taste
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Bring a litre of water to a boil in a large pot. Once it boils, add salt and drop in the strozzapreti. Cook the pasta according to package directions. Drain and dress with the radicchio cut in strips and the Nonno Nanni Squaquerello melted in a little of the hot pasta cooking water.
