Flatbread with Cherry Tomatoes, Grilled Courgettes and Nonno Nanni Squaquerello
400 g Nonno Nanni Squaquerello
10 basil leaves
20 cherry tomatoes
extra virgin olive oil, as needed
pepper to taste
salt to taste
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Cut the courgettes into slices about 2 mm thick. Season with salt and pepper. Add extra virgin olive oil to a grill pan and sear the courgettes. Cut the cherry tomatoes in half and season. Meanwhile, toast the flatbread on both sides in a non-stick pan. Put the Nonno Nanni Squaquerello on the warm flatbread, add the courgettes, tomatoes and a few basil leaves. Fold it in half and keep heating it for a couple minutes. Serve.
