Mixed canapés

Ingredients for 6 persons

Tuna cream:
80 g tuna in oil
80 g Fresco Spalmabile Nonno Nanni
a piece of  fresh ginger

Mortadella cream:
80 g one whole slice of mortadella with pistachios
80 g Fresco Spalmabile Nonno Nanni
2 handfuls of fresh pistachos
1 bunch of chives

Shrimp cream:
80 g fresh shrimp or frozen shrimp
80 g Fresco Spalmabile Nonno Nanni
2 natural whole lemons
a bunch of parsley

Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.

Method

Puree the chopped mortadella with Fresco Spalmabile Nonno Nanni and half of the pistachios chopped and transfer it all to a bowl.  Dip the shrimp in a pan with oil and garlic and sauté for a few minutes until cooked; if fresh, rinse well to remove the salt. Keep a few whole shrimp for decoration; others transfer them to a bowl with Fresco Spalmabile Nonno Nanni and blend by adding the washed and grated lemon rind. Drain the oil from the tuna, put in a bowl and liquidize with Fresco Spalmabile Nonno Nanni, grate fresh ginger and mix well.
Cut bread with a cutter and keep it covered with a damp cloth to keep it soft. Spread the creams; decorate the mortadella cream with chopped pistachios; the prawns with slices of lemon and whole shrimp; the tuna with ginger and chives.
These creams are also excellent on bread that has been toasted in the oven or on corn or rice crackers. You can keep them for a few days in the refrigerator in a container with a lid. This perfect for an outdoor picnic or a quick snack.
