Orange Cheesecake with Fresco Spalmabile
125 g digestive biscuits
1 tablespoon cane sugar
½ teaspoon ground cinnamon
100 g melted butter
350 g Fresco Spalmabile
150 g white sugar
grated zest of 1 organic orange
1 large egg
a pinch of salt
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Preheat the oven to 160°C
Purée the biscuits with the sugar and cinnamon into a powder. Add the melted butter and mix it in with a spoon.
Divide the mixture into moulds or a square baking pan lined with parchment paper and flatten the crust with the bottom of a glass.
In a large bowl, whip the Fresco Spalmabile with the sugar, grated orange zest, egg and a pinch of salt.
Spread the cheese mixture on the biscuit crust with a spoon. Level out the top of the cheesecake and bake for about 20-25 minutes.
Take the cheesecake out of the oven, let cool, cover with plastic wrap and refrigerate for at least 4 hours before cutting into squares to serve.
