Easter Bunny Pancakes with Fresco Spalmabile and fresh fruit
One pack Nonno Nanni Fresco Spalmabile
170 g sifted flour
7 g baking powder
20 g granulated sugar
A pinch of salt
150 ml milk
Sparkling water as needed
2 eggs
Vanilla extract (optional)
Butter for greasing the pan
2 vanilla pods
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Method
Mix the flour, baking powder, sugar and salt.
Pour the liquids gradually into the dry ingredients and mix thoroughly. Add the eggs, beaten slightly.
Do not mix excessively – the batter must not be too runny.
Leave to rest for approximately 10 minutes.
Grease the pan with a piece of butter.
Pouring a ladle of the batter onto the hot pan, form each of the different parts of the bunny: make a large disc for the body, a smaller disc for the head, two even smaller ones for the cheeks, two ovals for the feet and two more elongated ovals for the ears.
Wait for bubbles to appear on the surface of the pancake and then flip it over with a broad spatula. Wait until the pancake is golden brown on both sides. Assemble the bunny and decorate with pieces of fruit, Nonno Nanni Fresco Spalmabile for the feet, ears and teeth, and vanilla pods for the whiskers.
