Baked Eggs with Mushrooms and Thyme-flavoured Fresco Spalmabile

1 package Nonno Nanni Fresco Spalmabile

Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.

This is how it's made:
Wash the mushrooms to remove any soil. Fry an onion in a non-stick pan and cook for about 10 minutes, adding the chopped mushrooms. Season with salt and pepper.
Fill a baking sheet with boiling water to create a water bath. Flavour the Nonno Nanni Fresco Spalmabile with a pinch of nutmeg, salt and pepper to create a base layer for the baking dishes.
Then add a layer of mushrooms and finally an egg on top, and bake at 180°C for 10 minutes.
Take the baking dishes out of the oven and, using two spoons, form a quenelle with Fresco Spalmabile garnished with sprigs of thyme and pepper.
