Orange Thyme Waffles with Fresco Spalmabile and Rum Caramel Sauce

Ingredients for 6 persons

380 g “00” flour
200 ml milk
150 ml orange juice
115 g melted butter, plus 1 teaspoon
80 ml honey
2 eggs
6 g baking powder
1 pinch of salt
grated zest of 1 organic orange
fresh thyme
1 package Nonno Nanni Fresco Spalmabile
chocolate shavings
mixed berries

Ingredients for the rum caramel sauce

100 g raw cane sugar
90 g butter
120 ml cream
2 tablespoons rum
1 pinch of salt (or fleur de sel)

Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.

Method

Preparing the rum caramel sauce

Place the sugar and the rum in a large, high pot and cook on low, stirring with a whisk until the sugar is completely melted.
Keep the sides of the pot clean with a silicone spatula so the sugar doesn't burn.
Cook without stirring, lowering the heat to the lowest setting for about one minute.
Add the butter, cut into cubes, all at once, stir and, when it is completely melted, add the cream.
Keep stirring on the stove until you have a velvety sauce.
Let the sauce cool for a few minutes before serving.
This sauce will keep for a few days stored in a glass jar in the refrigerator.
Before serving, reheat it for a few minutes on the stove.

Preparing the waffles

Beat the egg whites into stiff peaks and set aside.
In a large bowl, sift the flour with the baking powder.
In another bowl, use a whisk to combine the rest of the liquid ingredients, the salt, orange zest and a few thyme leaves.
Pour the liquid ingredients into the bowl with the dry ingredients.
Mix together until everything is combined and add the beaten egg whites, stirring from top to bottom so the mixture doesn't fall.
Cook the waffles.
If you are using the oven, fill buttered silicone moulds 1/3 of the way and bake the waffles in a preheated 170°C oven until they are golden.
Serve immediately with quenelles of Nonno Nanni Fresco Spalmabile, rum caramel sauce, chocolate shavings and your favourite fresh fruit.
