Pancakes with Peaches and Nonno Nanni Fresco Spalmabile
1 package Nonno Nanni Fresco Spalmabile
3 tablespoons granulated sugar
300 g flour
16 g baking powder
250 ml milk, approx.
a little chilled soda water
a pinch of baking soda
butter, as needed
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Mix the cheese to soften with a tablespoon of sugar. Set aside.
Combine the flour with the baking powder, sugar and salt. Pour in the milk and a little water. Mix everything together. Add the lightly beaten eggs. The mixture should not be over-mixed. Let it rest for 10 minutes. Grease a griddle (it's best if you have a pancake griddle). Pour a ladle of the mixture on the hot griddle, wait until bubbles form on the surface of the pancake, then flip it with a wide spatula. Make sure both sides are golden. Serve the pancakes with peach slices, a spoon of Nonno Nanni Fresco Spalmabile, mint leaves and agave syrup.
