Chocolate and orange mousse
For the mousse:
150 g excellent quality 70% bitter chocolate
200 g of fresh cream
200 g Fresco Spalmabile Nonno Nanni
50 g cane sugar
2 mandarines or 2 small apples
for the bowls
1/2 glass of cointreau
For the baskets:
50 g butter
50 g icing sugar
50 g flour
1 egg white
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
For baskets: Melt the butter and cool it, mix the egg whites with the sugar and flour, add the cooled melted butter and the grated orange peel. Mix well. Preheat the oven to 180°, cover the oven tray with parchment paper; with a knife and spoon create some circles that are approximately 15 cm
in diameter and level with the knife. Bake two at a time and in the meantime, prepare two cups and two tangerines as a hood to cover them completely. As soon as the baskets are golden (about 6/8 minutes), quickly take them with a spatula and place them on top of the mandarin, immediately cover them with the cup: the basket takes shape immediately. Continue until all the batter is used.
For the mousse: Melt the chocolate in a double boiler. Whip the cream with the sugar, then always with a whisk, add Formaggio Spalmabile Nonno Nanni, the juice of half an orange and gradually add the chocolate. The delicious mouse is ready. For adult guests you can add the Cointreau at the end. Using a spoon (or, if you prefer, a pastry bag) fills the baskets and decorate them with strips of orange and chocolate chips. Either way, this dessert is perfect, delicious and refined after a meal, and a great snack.
The mousse is fine for filling cream puffs, decorating cakes or is served in glass cups without baskets.
