Fresco Spalmabile Rolls with Julienned Vegetable

1 package Nonno Nanni Fresco Spalmabile
1 red pepper
1 large dark green courgette
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Roast the pepper in the oven, remove the skin and seeds and cut into wide strips.
Use a mandoline slicer to cut the courgette into thin strips and grill them lightly on a griddle.
Cover the bread with a layer of courgette strips, spread Fresco Spalmabile on the courgettes and finally cover everything with the red pepper strips.
Gently roll the bread making sure too much cheese doesn't come out of the sides. Wrap it in aluminium foil and refrigerate overnight.
Slice the roll into wheels at least 2 cm thick.
Hold in place with a toothpick and serve with a fresh salad!
