Colourful Toast Family
2 packages Nonno Nanni Fresco Spalmabile
8 slices wholemeal or multi-grain bread
4 cherry tomatoes
a sprig of basil
a garlic clove
4 asparagus spears
Cyprus black sea salt
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Slice the bread. Top each slice liberally with cheese.
Smash the cherry tomatoes, and heat a tablespoon of olive oil in a pan.
Add a clove of garlic, the smashed tomatoes and a few basil leaves.
Let the tomatoes soften and then remove from the heat.
Using a vegetable peeler, slice the asparagus spears into ribbons.
Slice the radishes. Decorate the mama toasts with cherry tomatoes and fresh basil leaves,
the papa toasts with asparagus ribbons and pumpkin seeds and the baby toasts with radishes and black salt.
