Cream of Beets and Fresco Spalmabile
250 g beets
250 g potatoes
50 g Nonno Nanni Fresco Spalmabile
extra virgin olive oil
Cantabrian anchovies in oil
2 slices of wheat bread
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Boil the beets and the potatoes in a large pot of boiling water.
Cut the bread into cubes and toast in the oven with a drizzle of extra virgin olive oil. When the croutons are golden brown, sprinkle with smoked paprika.
Purée the potatoes and beets in a blender, gradually add the Nonno Nanni Fresco Spalmabile, the hot cooking water (until you obtain the desired consistency) and the extra virgin olive oil. Salt to taste.
Serve in a shallow bowl and top with two teaspoons of Fresco Spalmabile, the croutons, rolled anchovies and parsley.
