Friselle with Cherry Tomatoes, Basil and Nonno Nanni Fresco Spalmabile
8 wholemeal friselle (crispy bread rings)
500 g cherry tomatoes
3 tablespoons pitted Taggiasca olives
2 packages Nonno Nanni Fresco Spalmabile
olive oil, as needed
2 teaspoons Modena balsamic vinegar
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Wash the cherry tomatoes and cut in half. Put them in a large bowl with the olives, basil leaves, balsamic vinegar and sea salt. Allow it to marinate for 10 minutes so the tomatoes can give off their water. Moisten the friselle slightly with the juice from the tomatoes, cover with tomato pieces and let rest for a few minutes. Before serving, garnish the friselle with quenelles of Nonno Nanni Fresco Spalmabile Nonno Nanni and more basil leaves.
