Mini Pumpkin Quiches with Fresco Spalmabile
1 shortcrust pastry shell
400 g cleaned pumpkin
1 package Nonno Nanni Fresco Spalmabile
50 g grated pecorino
50 g grated parmesan
1 teaspoon corn starch
100 g diced bacon
olive oil
1 egg
nutmeg
salt
Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.
Method
These Mini Quiches, with their tasty, crispy pumpkin centre, will make your dinners with family or friends even more delicious!

This is how they're made:
Line a baking sheet with parchment paper and arrange the slices of pumpkin on it. Add a little olive oil and a pinch of salt. Bake in a preheated oven at 200°C for about 20 minutes.
Purée the pumpkin with the corn starch, add the Fresco Spalmabile, the grated cheeses, the egg, season with salt and mix well. Flavour with a little nutmeg.
Make the crusts for the mini quiche using a flower-shaped cookie cutter and line a muffin tin.
Fry the bacon in a non-stick pan, then place it on the pastry crusts and cover with the pumpkin filling.
Bake in a 180°C oven for about 40 minutes.
Let cool for a few minutes. They are ready to serve, warm or room temperature.

Tips: You can use the same ingredients to make a single quiche in a pan measuring 24-26 cm in diameter.
