Flan of leeks, turnips, pears, potatoes and stracchino
2 big potatoes
1 big white turnip (including its green little tops)
1 pear
1 leek
salt, pepper, fresh thyme
butter to taste
2 tablespoons of extra virgin olive oil

1 tablespoon of breadcrumbs

Method
To start out with, grease a baking tray with a little bit of butter.
Thinly slice the leek and let it stew in a small pan with a knob of butter, salt and pepper. Peel the potatoes, cut into thin slices and let them boil for about 5 minutes in boiling salted water, leaving them slightly underdone. Repeat the same process for the turnip and its little green tops cut at about 2 cm. Put the leek on the bottom of the baking tray and cover with potato slices, add turnips, season with salt and pepper, slice a large pear thinly, spread it on the turnips and cover with a final layer of potatoes and two tablespoons of extra virgin olive oil. Decorate with boiled little tops, thyme and Nonno Nanni Stracchino with probiotic ferment, broken by hand. Sprinkle the top with breadcrumbs and complete it with some curls of butter.
Bake at 180 ° for about 15 minutes and then at 200 ° C for another 5 minutes with the grill function: the flan is ready!
