Scallops with courgettes and Stracchino cheese
4 slices of pork loin
4 medium courgettes
Extra virgin olive oil
125 grams of probiotic soft cheese Nonno Nanni
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Another recipe on scallops, I love them in every way ... with this recipe I collaborate with the company Nonno Nanni on the project: "Recipes from the green food bloggers ... in defense of the environment with Nonno Nanni" here you can find information and recipes from food bloggers. In a pan heat some oil and in the meantime flour the meat on both sides. Cook the meat well both on one side and the other, meanwhile with a large hole grater grate the courgettes, when the meat slices are cooked remove them from the pan and keep them warm in a dish covered with aluminium foil. In the same pan, cook for a few minutes the courgettes (grated they are very quick to cook and don't need liquids because they lose a lot of water, but if you need to add a drop of oil), flavouring with salt and parsley, add stracchino stirring to melt a bit, then add the meat stirring often to make it taste good and to amalgamate the stracchino and courgettes. Serve hot, so the cheese will be nice and soft and stringy. Having quite a bit of courgettes on the surface I have not added the herbs I have just served it as it is!
