Risotto with cherry tomatoes and Stracchino
180 grams of rice
1 250 gr box of Nonno Nanni Yoghurt Stracchino cheese
half a shallot
a stock cube
extra virgin olive oil
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Fry the shallots with a little oil and add the rice and the stock cube, pouring in the white wine. Cook the rice until it is nice and crispy; just before the end, add the Nonno Nanni Yoghurt Stracchino until it’s melted. Finally, serve using a square pasta bowl and decorate with cherry tomatoes, olive oil and parsley.
