Aubergine Mini Pizzas
Ingredients for 4 persons
2 medium aubergines
250 g cherry tomatoes
250 g Nonno Nanni Stracchino
fresh basil
extra virgin olive oil
Maldon sea salt
freshly ground pepper
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Cut the aubergines into slices about 1.5 cm thick and arrange on a baking sheet lined with parchment paper. Pierce the flesh with the tip of a knife. Drizzle with a little extra virgin olive oil, season with salt and bake in a 180°C oven for 20 minutes. Take out of the oven and top with tomato wedges and cubes of Nonno Nanni Stracchino. Finish with a drizzle of extra virgin olive oil, Maldon sea salt, freshly ground pepper and basil leaves. Serve immediately.
