Asparagus omelette with Stracchino
150 gr. asparagus
1 Nonno Nanni Stracchino with probiotics
extra virgin olive oil
salt and pepper to taste
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
First, grease a pan with extra virgin olive oil. Use a large bowl, break 4 eggs and add salt, pepper and a sprinkling of Parmigiano cheese: stir with a whisk to mix well. Wash the asparagus, remove the tough end of the stem and place them in a high and narrow pan to boil in boiling salted water: the tips should not be in contact with water, but get cooked with the steam of the boiling water. Pour the mixture of eggs into the pan, add the asparagus and cook for a few minutes turning the omelette from time to time.
Lay it all on a plate, spreading the Nonno Nanni Stracchino with probiotics, which will melt beautifully with the heat ... Can you smell it too?
