Creamy Mezze Maniche with Spinach Pesto
360 g mezze maniche
1 bunch fresh spinach
1 handful almonds
50 g parmesan
100 ml extra virgin olive oil
100 gr stracchino
salt and pepper to taste
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
2. Rinse the spinach, transfer to a frying pan and cook for a couple of minutes (it should be wilted).
3. Place the spinach, oil, almonds and parmesan in an immersion blender and purée.
4. Drain the pasta when firm to the bite and sauce with the pesto. Stir in the stracchino until creamy.
5. Sprinkle with crumbled almonds.
