Spiced pumpkin and Nonno Nanni Stracchino cream
300 g of unseeded pumpkin
200 g of Nonno Nanni Stracchino
four slices of homemade bread
60 g of milk
white wine vinegar
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Collect 400 g of water in a high-sided pan, 3-4 tablespoons of sugar, a good pinch of salt, 2 bay leaves, 3 small pieces of cinnamon, 2 pieces of star anise, 4 teaspoons of vinegar, 3 cloves,6 lemon zests, 3 or 4 pieces of fresh ginger and let the liquid boil.
Cut the pumpkin into very thin slices by possibly using a slicer.
Pour in a pan together with spiced water, let it boil gently for another 10 seconds, then take it off the flame, seal the pan with some plastic wrap and let the pumpkin marinate for 5-6 hours.
Blend Nonno Nanni Stracchino with milk for 3-4 minutes, season with salt and pepper until getting a well-blended and creamy mixture. Serve marinated pumpkin with Stracchino cream and add some toasted slices of bread.
