Savoury Torte with Broccoli and Nonno Nanni Stracchino
Ingredients for 4 persons
broccoli
a dozen broccoli florets
1 roll of shortcrust pastry
1 package Nonno Nanni Stracchinoi
few cherry tomatoes (optional)
a pat of butter
salt
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Boil the broccoli in salted water, drain half of the florets in advance, when still firm. Drain the rest of the broccoli and smash lightly with a fork into a sort of mashed broccoli, season with salt and let cool. Put the shortcrust pastry in a buttered round cake pan. Pierce the bottom of the pastry and add a layer of mashed broccoli. Cover with the stracchino. Top the torte with the reserved broccoli florets and a few cherry tomatoes. Bake the torte at 180-200°C for about 35 minutes. Before serving you can add a few quenelles of stracchino.
